Catering for fun: surprising crea- tions for everyone to try T O W E R R E V U E // 29 e “IGNIV”—what kind of a name is that? ” It’s fromthe Romansh language and means „the nest“, explains Andreas Caminada. “It’s what our restaurant aims to be: a place where you can simply switch off, enjoy food and company, and wind down a little”, adds Marcel Skibba, Head Chef at IGNIV, Caminada’s signature restaurant. At the end of December, he is coming with ten colleagues from the Schauenstein Castle restaurant to the Badrutt’s Palace Hotel. Although still a young man, he has been cooking at a three-star level for many years and for two years in Fürstenau. He has now been rewarded with his first “own” star at the age of 31 – almost as young as Ca- minada was when he garnered the same accolade. “I have the castle’s DNA”, he grins. This means he guarantees cuisine of the highest standard and is a perfect fit for a pi- oneering concept in St. Moritz: the “Fine Dining Sharing Experience” combines classic dining culture and modern ease in a fusion that is “great fun” for gourmets. This is how it works: the guests sit at elegantly set tables, and the experience gets underway. After champagne and ape- ritifs, a succession of new dishes are served which “are naturally very detailed and sophisticated”. For example, five starters. And there’s no more coyly stealing from the plate of your neighbour: each diner takes what they fan- cy, and because everyone tries lots of things, there is plenty of time for chatting over the food. “Also offered are ‘surprises’ and the ‘truffle add-on’, which allows you to really enjoy a full-on feast”, enthuses Skibba. “The IGNIV is a really cool venue and can be a dining experience that fills the whole evening.” And one that’s exciting for the chef, too: “When it comes to starters alone, I can present at least five absolute crackers!” //
